Desperation-Super-Fast-Delish-Pull-Apart-BBQ Pork Sandwiches

3 lb. pork loin
1 envelope Lipton Onion Soup Mix
BBQ sauce, titer to taste (don't be shy, though)

In a crockpot, simmer pork in 3 cups water until extremely tender, where it can be pulled apart easily by 2 forks. Clean out crockpot, spray with Pam, and return pulled-apart pork. In a separate bowl, mix BBQ sauce and onion soup mix together well. Pour over pork in crockpot and stir until evenly coated. Cook on low until nicely heated through. Serve with your favorite delish buns; mine are the fantastic Cibatta rolls from Costco. This is a great meal when you have a family function ie blessing, baptism, or birthday. It's really no fuss and guests LOVE it!

Desperation Lasagna Decadenza

2-3 c. cooked noodles (doesn't matter what shape; corkscrew, bowtie, whatever you have in your pantry and what is easiest)
1 lb. extra-lean ground sirloin or hamburger
1 c. chopped onion
2 tsp. bottled minced garlic
2 tsp. dried Italian Seasoning
1 26 oz. jar spaghetti sauce
1 c. ricotta (or cottage) cheese
2 c. already shredded mozzarella cheese

Start boiling water and noodles. In the meantime, spray an extra deep 12" non-stick skillet (that has a lid) with Pam. Begin to sautee onions and garlic, then add meat; brown and crumble as you go along. Add Italian Seasoning, ricotta (or cottage) cheese, 1 c. mozzarella, and spaghetti sauce. Mix until evenly coated. Reduce heat, cover and simmer for a few minutes, until heated through. In the last few minutes, stir around one more time, smooth top, and add remaining 1 c. mozzarella. Cover and let the cheese melt. Serve immediately; serves 5-6.

OK, this won't win any beauty contests. Most will think it looks like leftover lasagna. But who cares if it's beautiful if it tastes good? When I'm desperate, 2 hours in the kitchen for beauty's sake is not worth it to me.

Best with salad and french bread (that you can buy already prepared with garlic butter from Smith's or Walmart...just heat in your oven and WALAA)

*Note: I get bottled minced garlic from Costco. It is very inexpensive and can live in your fridge forever. Also, you can get frozen onions in a bag, already chopped from WalMart. Great for when you are particularly desperate.

Desperation Dinners!!

Before I was married, I would dream about the life I would have with my husband and children. I dreamt how I would make them a homemade meal every night. I would be an expert at making bread from scratch daily. Surely I would be able to whip up a London Broil with a few flicks of my wrist. Homemade chocolate chip cookies would be a staple that never ran out in my cookie jar. I would have my own custom-designed pink apron with polka-dots that would never get dirty. Then I came home from my honeymoon and Andrew asked me one of the most horrifying questions that has continued to torment me every day for the last 12+ years of marriage, "what's for dinner tonight?" With horror I asked Andrew, while trying to disguise my fright, "what would you like for dinner tonight?" Then I received the dreaded answer that I have received most nights over the last 12+ years, "whatever is fine with me." GGGRRRRR!!!

Most every night between 5:00 and 6:00, I turn into a desperate woman. The kids are hungry and whining, the baby's crying, I'm exhausted, and my husband is nowhere to be found. There's also a huge chance that I haven't been within miles of a grocery store in days. Deep down in my heart I want to create a delicious meal for my family, but cookbooks do little more than taunt me with picture-perfect food far beyond my abilities to prepare. And a box of macaroni and cheese makes me feel guilty! OH, the guilt! There's GOT to be some middle ground between a 2 hour-long stint as a stove slave and elecrocuting hot dogs!

Over the past 12 years of marriage, I have discovered that my life includes more desperation than I would prefer. It took me awhile to realize that the main obstacles that stand between me and my homemade bread and other gourmet feats are...KIDS! If one of them spikes a fever, cooking time gets traded in for the doctor's office. And then there are homework assignments and car pools. Figure in working 12-hour shifts, trying to sleep a little bit after work, volunteer efforts, housework, gardening, LAUNDRY, and studies that show we should get our daily aerobic exercise dinner will never get made! Add any single unexpected interruption, be it a long-distance phone call from an old friend or a flat tire, you'll have to wait until breakfast to eat dinner at our house. On most nights, I don't even WANT to hear about the joys of fresh thyme!

Fortunately, I wouldn't trade my kids for anything. I love them dearly and all of their needs go above any of my own. I have been lucky, though, over the years to have developed many dinners which I like to call "Desperation Dinners" because they can be prepared in 20 minutes or less. Hooray! I also love my slow cooker, which with a little planning, saves me HOURS in the kitchen and still provides a great homemade meal for my family that warms the very soul.

Cute Kids


A fun summer memory is when I was on maternity leave. We took the kids up to Utah State, where Andrew and I first met. We took them around campus to show them where Mommy and Daddy went to school together. Here we are sitting on the famous "A." Legend has it that if you kiss your loved on at midnight on Homecoming Night, you're a "True Aggie." It's hard to do this, though because the line to the A at midnight on Homecoming night is about 2 miles long. We also took them to various other sites, like where our apartments were, the hospital where Sadie was born, and the Logan temple. We then had Aggie ice cream, of course, which is a MUST when you visit Logan.
